(Time to prepare – 20 min. plus refrigerating; Serves 16 – about 2/3 c. each)


1 pkg. (8 oz.) fat-free cream cheese, softened
3 c. Hood milk or Almond milk
2 pkgs. (3.4 oz.) fat-free vanilla instant pudding
1 carton (8 oz.) sugar-free whipped topping, thawed and divided
48 reduced fat vanilla wafers
1/2 c. brewed strong coffee, cooled and divided
2 squares semi-sweet chocolate, grated
1 c. fresh raspberries


Beat cream cheese with mixer until creamy. Gradually beat in milk and pudding mixes. Stir in 2 c. whipped topping. Line 2 1/2 qt. bowl with 24 wafers; drizzle with 1/4 c. coffee. Top with half of the pudding mixture and half of the chocolate. Repeat layers.

Top with remaining whipped topping and refrigerate for 2 hours.
