Coffee Cup Muffin

Ingredients:
1 whole egg or egg white
2 T. flax seed
1 tsp. baking powder
1 tsp. cinnamon
Directions:
Beat the egg in a coffee cup. Mix in remaining ingredients. Cook in the microwave for 1 minute. Serve with sugar-free jelly (or bake with a small amount of honey).
